It’s so important to eat well, especially when you have health conditions. However, when you have those low energy days, the last thing you want to do is be in the kitchen for a long time, slaving over the hob. That’s why we’ve put together a list of 12 super easy meals to make on low spoon days. They’re packed with flavour, full of nutrients and, most importantly, easy to make with minimal effort!

This dish is super easy to make, super tasty to eat AND you can create lots of different, easy meals with its leftovers. It’s only 2 ingredients and you can prep it quickly and then leave it. What more can you want!

One thing which I really struggle with when I’m low on spoons is the mess which can come from cooking. That’s why this recipe is so good – it’s tasty, full of nutrients and virtually mess free. Not only is it easy to make, but it’s also really cheap to make as well!

Yep, you read that right. A healthy meal which will be ready in 1 minute which is perfect for those low spoon days. It’s a warm lentil salad and sounds absolutely delicious!
4. Fifteens – a recipe for people who can’t bake
This recipe is perfect for those days where you have a real sweet tooth but don’t have the energy to do any baking. It’s a traditional Northern Irish recipe and has a real rocky road feel about it.
5. Oaty Banana Breakfast Cakes
Breakfast is the most important meal of the day but on low spoon days, it can feel like a lot of effort. This recipe is gluten and dairy-free, only has 3 ingredients and you can keep it in an airtight container so you can have it a few days in a row!

This is one of my favourite recipes to make when you’re wanting a nice bowl of some tasty, flavoursome food but you have no energy. Put everything in trays, add your spice and let it cook and voila! A hearty, nourishing dinner for all the family.
8. Bruschetta Brunch Crumpets
This is the perfect super brunch idea which is full of flavour and has a fancy Italian feel. This would be a great breakfast OR lunch and looks like you’ve made a lot of effort. It’s got one of your 5 a day and, because of the tomatoes, has a real freshness about it too.
9. Healthy microwave pasta
The microwave is a spoonies best friend on low energy days. The best thing about this recipe is that you can make it as simple or fancy as you have the energy to. If you want to make a sauce or cook some veg to go with it, you can! Or you can make it a simple, easy, no fuss pasta meal.
10. Creamy microwave macaroni & cheese
Microwave mac & cheese is my go to on low energy days. It’s the ultimate comfort food which is packed with flavour. The best thing about the microwave version is that there’s hardly any washing up! Just the bowl you make it in (which you can eat from as well!)
11. Easy peasy tomato and mozzarella salad
Once the warmer, summer months come around, you really can’t beat a fresh salad. Tomato and mozzarella salads are full of flavour, great for keeping you hydrated (as they have a high water content) and super easy to make. You can use this for lots of things; on top of toast for a bruschetta style meal OR on it’s own.
12. Easy to eat sausage casserole
Healthy comfort food which doesn’t take a lot of effort to either make or eat is perfect for low spoon days. If you struggle with chewing on low energy days, this recipe is a good one as it’s a very soft meal, but with lots of flavour.
